Recipe – Italian Wedding Soup

I LOVED this soup. It’s a recipe I found in Barefoot Contessa when I was cruising for some comfort food! Jeff has started occasionally taking leftovers to work and this was perfect! Enjoy 🙂

For the Meatballs:
3/4 lb. ground chicken (I used turkey because the store didn’t have any ground chicken!)
1/2 lb. chicken sausage, casings removed
2/3 c. fresh white bread crumbs
2 t. minced garlic (2 cloves)
3 T. chopped fresh parsley
1/4 c. freshly grated pecorino romano cheese
1/4 c. freshly grated Parmesan cheese
3 T. milk
1 extra large egg, lightly beaten

For the Soup:
2 T. good olive oil
1 c. minced yellow onion
1 c. 1/4 inch-diced carrots (3 carrots)
3/4 c. 1/4-inch diced celery (2 stalks)
10 c. chicken stock (I bought Whole Foods stock for the first time and was MOST impressed – very rich and delicious flavor)
1/2 c. dry white wine
1 c. small pasta such as tubetini or stars
1/4 c. minced fresh dill
12 oz. baby spinach, washed and trimmed

Preheat the oven to 350 degrees.

For the meatballs, place all the ingredients in a bowl and combine gently with a fork (I found a spatula worked better…or my hands!). With a teaspoon, drop 1- 1 1/4 inch meatballs onto a sheet pan lined with parchment paper. Bake for 30 minutes, or until cooked through and lightly browned. Set aside.

In the meantime, for teh soup, heat the olive oil over medium-low heat in a large, heavy bottomed soup pot. Add the onion, carrots, and celery and saute until softened – 5-6 minutes, stirring occasionally. Add the chicken stock and wine and bring to a boil. Add the pasta to the simmering broth and cook for 6-8 minutes or until the pasta is tender. Add the fresh dill and meatballs to the soup and simmer for 1 minute. Taste for S&P. Stir in the fresh spinach and cook for 1 minute, until the spinach is just wilted.

Ladle into soup bowls and sprinkle each serving with extra grated parmesan cheese.

We were up early to take a walk and see Jeff’s Mom off to the airport but
with 2 warm puppies lying next to me and 5 degree temps outside it’s
hard to motivate to get out of my warm bed for the second time 🙂

Girls Day In!

Last week a group of photographers got together for a girls day in of hanging out, eating and chatting – our favorite things to do 🙂
After lounging around all afternoon we figured we’d better get a bit of exercise so just as the sun was going down we headed out for a walk in the glory light.
Harrison (Robin Dini’s adorable little guy) decided this wasn’t worth staying awake for!
Sage’s first experience with water 🙂
Not as scared as Strider but wasn’t interested in going all the way in – fine with me!
Behold the cuteness 🙂
Come on – how cute is he??!!
The crew: Me, Cheryl Cronin, Salty Grapes Julia, , Carla, Strider, and Robin 🙂

Thanks for a fun day ladies 🙂

Get comfortable because this is going to be a looooong post 🙂

Ashley and I went to high school together so it was particularly special to be able to document her wedding. Brian and Ashley and both of their families just couldn’t have been nicer or more welcoming. Ashley has affectionately named her Mom “Marti the one woman party.” Marti and Ashley did an amazing job planning and coordinating a wedding that was beautiful and warm – people danced the night away and everyone just had an incredible time.

I’ll let the pictures begin to tell the story…..

The whole day Ashley was simply radiant and kept repeating “I’m so excited. I’m so excited. I’m so excited” – it was adorable!

Her beautiful Lela Rose dress struck the perfect balance between being elegant and casual – ideal for a beach wedding. You can’t really see the scale in the photo of her amazing shoes but Ashley has simply teeny tiny feet!

A few more details -the simple invitations decorated with a starfish.

Handkerchiefs Ashley had embroidered as gifts for her parents.
Her beautiful and simple earrings.
The welcome bags given to guests (a lovely touch for people arriving from out of town)

This dress was FIERCE. Haute Hippie strikes again!

Ashley wore her family’s veil which has everyone’s initials and wedding dates embroidered along the edge – pretty special.

Some of the 11! bridesmaids relax as Ashley finishes getting ready

Love this image.

Does she look relaxed and happy or what??

Love this – all the ladies watch as the dress is prepared for Ashley

Love this one.

A few details of the ceremony site before people started arriving….

Now it was a wee bit windy on the beach but people took it in stride 🙂

Ashley’s Mom enjoys the beginning of the ceremony 🙂

Let it begin!

Brian catches his first glimpse of Ashley coming down the aisle 🙂

Happy happy happy 🙂

Time to turn up the volume 🙂

Yes that is a shoe flying through the air 🙂

Liquid Pleasure played for four hours straight and nobody left the dance floor – VERY fun to photograph!!

This was the official “it’s a small world after all” wedding…

More fun on the dance floor

This little one TORE IT UP!!!

One of the bridesmaids got a little warm so she turned her long dress into a short dress and provided her boyfriend with a fun accessory….Ashley took it in stride 🙂

For the grand finale Marti sang to Brian & Ashley and brought the house down!

A huge thank you to Eileen for being my fearless sidekick 🙂

And once again thank you to Brian and Ashley for having such an amazingly beautiful and fun wedding and having us along 🙂

Brian & Ashley’s Rehearsal

Brian & Ashley’s wedding photos will be up soon but in the meantime enjoy these few from their rehearsal the night before on the beach. I love photographing rehearsals because it gives me an opportunity to meet everyone, scope out the scene for the next day, and develop a loose plan of where I’ll take photographs. The sun was setting and the light was just amazing for Ashley & Brian’s rehearsal.

Ashley is just a little excited 🙂
I loved the big ribbon bouquet from her shower!

Love Brian’s expression

Ashley was a LOT of fun to photograph – she is SO expressive!

It’s fun to watch parental reactions 🙂

Can you imagine a more beautiful place for a wedding?

Brian’s adorable little nephew

Stay tuned – wedding photos coming soon!
