Baked Chicken Recipe

I found this recipe on Facebook and it’s called “Man Pleasing Chicken” from the Metabolic Cookbook which sounds a bit silly to me 🙂 They promised that it was the “world’s best chicken recipe” and it is pretty delicious and easy. I’m not sure I’d go so far as to call it the world’s best but I guess it’s subjective! We used chicken thighs as we had some in our freezer that we needed to use up but you could easily do it with breasts or tenders and just adjust the cooking time. We also didn’t have fresh rosemary on hand as Norah was not in the mood to grocery shop that particular day!!

Baked Chicken i.e. “Man Pleasing Chicken”

1 package of skinless chicken breasts (we used thighs)
1/2 c. Dijon mustard
1/4 c. Maple Syrup
1 T. rice wine vinegar
Fresh rosemary
Salt & Pepper

Preheat the oven to 450

Mix together Dijon mustard, maple syrup, and rice wine vinegar.

Put the breasts into a foil lined baking dish (clean up was a cinch!!) Salt and pepper the chicken and pour your maple mustard mixture over them, turning the breasts in the mixture so they are fully coated.

Bake in oven for 40 minutes or until a meat thermometer registers 165. Baste the tops of the chicken with more sauce halfway through.

Let the chicken rest for 5 minutes. Spoon over extra sauce and garnish with chopped rosemary.
