Happy Sunday! The last few weeks Jeff and I have certainly not been rockstar chefs – with all that’s going on and as we prepare to move at this point we are just trying to eat out of our freezer so we don’t have too much left. Sole and Haddock fillets were on sale at Whole Foods one week and I went….a little overboard 🙂 We actually now only have one left but it’s definitely been a frequent meal. I found this easy recipe somewhere online but now can’t remember where. It’s relatively easy and quick so that is always a good thing!!
1 1/2 lbs. white fish
1 T. fresh lime juice
1 T. mayo
1/8 t. onion powder
1/8 t. black pepper
1/2 c. fresh bread crumbs
1 1/2 t. butter, melted
2 T. chopped fresh parsley
Preheat oven to 425
Place fish on a baking dish coated with cooking spray. Combine lime juice, mayo, onion powder, and black pepper in a small bowl and spread over the fish. Sprinkle with breadcrumbs; drizzle with butter.
Bake at 425 for 20 minutes or until the fish flakes easily when tested with a fork.
Sprinkle with parsley and serve (I like to squeeze a lemon over the top for added flavor!)
