This recipe has become a recent favorite after my friend Megan (who is the owner of Seeds Holistic Health) brought it to Girls Crafting Weekend. The best part about it is that depending on your tastes and what you’re in the mood for you can adjust the ingredients. It feels desserty but I like to tell myself that it’s a BIT healthy so it makes me feel better than eating a big old piece of cake would 🙂
Granola Dessert Bites Recipe
2 1/2 c. rolled oats
1 c. brown rice flour
1 T. cinnamon
1/4 t. sea salt
3/4 c. pure Maple Syrup
1/2 c. canola oil
1 t. vanilla
1/2 c. chocolate chips
Preheat oven to 350.
Combine oats, flour, cinnamon, and salt in a large bowl.
In a separate bowl (or a measuring cup….save on washing up!) combine the syrup, oil, and vanilla.
Add the wet ingredients to the dry ingredients, mixing until just combined.
Fold in the chocolate chips.
Line a baking sheet with parchment paper and scoop batter. (The dough is really wet so after making them the first time I went out and bought a mini cookie scoop – makes it so much easier and cleaner!).
Push in any loose pieces with your fingers 🙂
Bake for about 15 minutes @ 350 until lightly browned
The first time I made them with nuts but I eat nuts in salad and like to keep my desserts pure so since then I’ve only used chocolate chips.
Megan has also experimented with pecans, coconut, walnuts, and raisins – get creative!
