Recipe :: Cheese Crusted Pork

For quite a while I subscribed to Everyday Food and while I loved it I just had SO many recipes that I hadn’t tried yet that I let my subscription lapse. Between Oprah and Cooking Light I still have a ton of recipes. This one is quick and delicious – try it!

Cheese Crusted Pork (Everyday Food)

3/4 c. panko breadcrumbs
3/4 c. finely grated Pecorino Romano
Coarse S&P
1/2 c. A.P. Flour
2 large eggs, slightly beaten
4 boneless pork loin chops
1/4 c. olive oil

In a shallow dish, combine panko, pecorino, and salt and pepper. Place flour and eggs in separate shallow dishes. Season pork with salt and pepper. Coat pork in flour (shake off excess), dip in egg, then coat with Panko mixture, pressing to adhere. In a non-stick skillet, heat o.o. over medium high. Add pork and cook until golden brown and cooked through, about 2 minutes per side.
