Recipe :: Cheesy Meat Loaf Minis

This delicious recipe is from Cooking Light – we made it a few weeks ago with Aidan & Jonas. They are learning to cook so every few weeks we choose a recipe and they come over and cook it – very fun! This winter we are doing Pete’s Greens Meat Share which has been awesome so the ground beef was SUPER high quality from happy grass fed cows!

Cheesy Meat Loaf Minis (Makes 6 loaves)

1/2 c. fresh breadcrumbs
1 c. chopped onion
2 garlic cloves, chopped
1/2 c. ketchup, divided
1/4 c. chopped fresh parsley
2 T. grated Parmesan cheese
1 T. prepared horseradish
1 T. Dijon mustard
3/4 t. dried oregano
1/4 t. salt
1/4 t. pepper
3 oz. white cheddar cheese, diced
1 1/2 lbs. lean ground sirloin
1 large egg, lightly beaten

Preheat oven to 425

Heat a skillet over medium-high heat. Add breadcrumbs and cook 3 minutes until toasted, stirring. Put breadcrumbs in a bowl and set aside. Re-coat pan with cooking spray if needed. Add onion and garlic, saute 3 minutes. Combine all ingredients into a large bowl. Shape into 6 mini loaves on a broiler pan coated with cooking spray. Spread 2 t. ketchup over each. Bake at 425 for 25 minutes or until done.

Recipe notes:

This recipe created A LOT of smoke – not sure why and I’m not sure what to suggest to fix it but do yourself a favor and turn the fan on high when you put it in the oven!

I read a tip somewhere that if you don’t have a broiler pan with holes (to drain the fat) you can place the loaves on carrot or celery sticks so the fat can drain below them.
