Recipe :: Linguine with Tomatoes and Basil

Pete’s sweet Mother sent me this recipe from the Silver Palate cookbook – an easy yummy recipe….just my type! Note that you have to start the recipe about 2 1/2 hrs. before you want to eat. Thanks so much, Jennifer!!

Linguine with Tomatoes and Basil (Silver Palate Cookbook)

4 large ripe tomatoes, cut into 1/2 inch cubes
1 lb. brie cheese torn into irregular pieces
1 c. basil, cut into strips
3 garlic cloves, peeled and finely minced
1 c. + 1 T. olive oil
2 1/4 T. salt
1/2 t. pepper
1 1/2 lbs. linguine
Freshly grated parmesan

Combine ingredients through S&P in a large serving bowl. Prepare at least 2 hours in advance and set aside, covered, at room temperature. Boil pasts per directions. Drain pasta and immediately toss with sauce – garnish with pepper and parmesan
