Recipe :: Salmon Burgers with Green Yogurt Sauce

I can’t remember how I stumbled onto this recipe but when we had some ground salmon from our farmshare I did some googling and came up with this – it was delicious!!!

Salmon Burgers with Green Yogurt Sauce (via Pain Free Kitchen)
Burgers:
3/4 lb. ground salmon
1 t. Dijon Mustard
a t. plain Greek Yogurt
1 green onion, minced
1 1/2 t. capers, drained and minced
1/4 t. black pepper
2 T. olive oil
Sauce:
2 T. plain Greek Yogurt
3 T. mayo
1/2 t. Dijon mustard
1 large green onion, minced
1 1/2 t. capers, drained and minced
Juice of 1 lemon
Black pepper to taste

Combine ingredients for burger in a bowl and mix gently. Form into patties and place on foil or wax paper. Put in freezer for 20-30 minutes to firm up (don’t freeze them!).

Heat the oil and fry up the burgers on medium heat for 2 minutes per side.

Mix up ingredients for sauce and serve on bun
