We recently discovered Acorn Squash and now I know what all the fuss is about – it’s quick to make, very healthy and super delicious – go try it! If you’re not familiar with preparing squash – for this recipe you want to cut it in half, scoop out the seeds, and then cut it into half moon shapes about 1/4 inch thick. Once it’s roasted you can eat it – skin and all!
Roasted Acorn Squash with Asiago Cheese (2+ servings)
1 Acorn Squash
3 T. olive
Salt and pepper
2T Asiago Cheese
2 T fresh sage, chopped
Preheat oven to 475
Toss squash with 3 T. olive oil, salt, and pepper. Toast 15-18 minutes or until squash is just tender. Turn up oven to broil. Sprinkle Asiago and Sage over squash and broil until cheese is browned and bubbling about 3 minutes.
