I found this recipe for Shrimp Lo Mein in Real Simple – always a great source for quick and easy recipes. Each time we try a recipe that we like I copy it onto an index card and assign it a check or check plus rating (although now we have so many it has to be pretty good to even make it in!!). One of my other notations is QE which as evidenced above means quick and easy recipe! Some nights we feel like getting involved with very time consuming recipes but there are other nights when we’re either feeling lazy or we’re super hungry and need something quick. We had four recipes out to try this week and this was the quickest so we tried it and voila – we were very happy with the results!!
Shrimp Lo Mein
8 oz. Lo Mein Noodes (we used rice sticks)
2 T. Canola Oil
1 Lb. peeled and deveined medium shrimp (uncooked)
1/2 lb. snow peas, trimmed
4 scallions, thinly sliced, white and green parts separated
2 cloves garlic, chopped
1/4 c. oyster sauce
2 T. rice vinegar
1 T. soy sauce
Crushed red pepper for serving
Cook the noodles according to the package directions
Meanwhile, heat the oil in a large skillet over high heat. Add the shrimp, snow peas, scallion whites, garlic, and 1/2 t. salt. Cook, tossing occassionally, until the shrimp are cooked through, 2 to 3 minutes.
Add the oyster sauce, vinegar, soy sauce, and 1/4 c. water; cook, tossing, until thickened, 1-2 minutes. Add the noodles and toss to combine. Serve sprinkled with red pepper and scallion greens.
