Recipe – Lemony Baby Broccoli

I’m up in Vermont for a few days for another dress fitting and to see some friends. It is SNOWY up here and is supposed to snow more tomorrow as I’m driving back down to CT – let’s hope the roads aren’t too bad!

This is a simple side dish to kick your veggies up a notch – it is from Everyday Food

1 T. olive oil
2 bunches of broccoli, tough ends trimmed
2 garlic cloves, thinly sliced
1/4 t. crushed red pepper
1 T. fresh lemon juice

In a large skillet, heat oil over medium. Add broccoli, garlic, and, if using, red pepper flakes. Cook until broccoli is bright green, about 3 minutes.

Add 1/4 c. water to skillet; cover, and cook until broccoli is crisp tender, 6-8 minutes. Add lemon juice, and season with S&P. Toss to combine and garnish with lemon wedges.

Voila – veggies dressed up and ready to go 🙂
