Recipe :: Rack of Lamb with Mustard Thyme Crust

We had this DELICIOUS Rack of Lamb Recipe on Christmas day and it was beyond amazing. It’s fairly easy and quick for being so flavorful…..enjoy!

2/3 c. Dijon Mustard
2 T. minced garlic
4 T. olive oil
2 T. chopped fresh thyme
2 racks of lamb
2 c. Panko breadcrumbs
Salt & Pepper to taste
Fresh Thyme for Garnish

Preheat oven to 425

In a mixing bowl, mix mustard, garlic, olive oil, and thyme.

Place rack of lamb on a clean flat surface, rounded side up. Spread the mustard mixture evenly over the rack. Sprinkle bread crumbs on a large flat plate. Roll rack in the breadcrumbs so it’s evenly coated. Roast lamb for 25 minutes or until internal temperature reaches 125. Let rest for 5-7 minutes loosely covered with foil. Garnish with fresh thyme
