Recipe -Raspberry Zinger and Mint Lemonade

On this boiling hot day I thought something to cool you down was in order!

We tried this recipe over July 4th weekend and it was such a hit that I’ve made it twice since then – for Jeff’s parents and for a shower I hosted for my friend Alyssa (more on that to come!).

It’s a light and refreshing summer drink and quite easy to make. The recipe is from Real Simple and although I don’t typically make specialty drinks along with our Kebab-Off over July 4th we had a Specialty Drink Off so I was on the hunt for something to try!
Basic Lemonade:
In a small saucepan, combine 1/2 c. sugar and 1/2 c. water. Bring to a boil, stirring occasionally, until the sugar is disolved; let cool. In a pitcher, combine the syrup with 1 cup fresh lemon juice and 2 1/2-3 cups water. Pour over ice
Raspberry Mint Variation:
Add to basic lemonade recipe…..
4 bags Raspberry Zinger Tea
2 cups fresh mint leaves
Steep the tea and mint in 2 cups boiling water, gently mashing the mint; let cool. Discard the tea bags and mint. In a pitcher, combine the tea and lemonade. Serve over ice and garnish with mint sprigs.
Unfortunately all three times I made it I forgot to take a picture (DOH – was too busy enjoying it!!) but the color is beautiful and quite festive! Also we did spice it up a bit for July 4th by adding 3/4 cup of vodka so that is an option.
