These Shingled Roasted Potatoes are from Martha Stewart – fairly easy and very very yummy!
Preheat oven to 425
Peel one long side of a potato
Thinly slice crosswise not quite going all the way through
Brush sliced potatoes with olive oil and season with coarse salt
Bake on a baking sheet in lower third of oven until tender and slightly brown (~1 hour)
Sprinkle with cheese and broil for 1-2 minutes to brown
