This is a flavorful and fairly easy recipe – yum yum!
Spicy Asian Noodles with Chicken (Cooking Light)
1 T. dark sesame oil, divided
1 T. grated peeled fresh ginger
2 garlic cloves, minced
2 c. chopped chicken breasts, cooked
1/2 c. chopped green onions
1/4 c. chopped fresh cilantro
3 T. soy sauce
2 T. rice vinegar
2 T. hoisin sauce
2 T. ground fresh chili paste
1 (6.75 oz.) package rice flour sticks/noodles
2 T. dry roasted peanuts, chopped
Heat 2 T. oil in a small skillet over medium-high heat. Add ginger and garlic to pan; cook 45 seconds, stirring constantly. Place in a large bowl. Stir in remaining 1 t. oil, chicken, and next 6 ingredients.
Cook noodles according to directions. Drain and rinse – cool. Cut noodles into smaller pieces and toss with chicken mixture. Sprinkle with peanuts and serve.
