Recipe – Spinach Stuffed Flank Steak

We had a great relaxing weekend at the lake enjoying the beautiful fall colors and unseasonably warm weather (it was 80 today!!). Both days we took long walks with Strider and our friend Giles and just generally had a great time. On Friday night Jeff cooked me dinner and it was YUMMY. This recipe comes from Everyday Food. Enjoy!

Fresh Spinach
1/4 c. fresh parsley, chopped
1/4 c. grated parmesan cheese
2 T. balsamic vinegar
Steak (good to buy a cut about 1/4 inch thick)
1 garlic clove, minced
1/4 t. red pepper flakes
1 t. olive oil

Heat broiler, with rack set four inches from heat. Line a rimmed baking sheet with aluminum foil; set aside. Wash spinach and spin dry. Tear into small pieces.

In a bowl, combine spinach, parsley, cheese, vinegar, garlic, and red pepper flakes. Season with S&P. Pat mixture into center of steak and roll it up – securing with a toothpick or kitchen twine. Season with oil and rub outside with S&P.

Broil until browned, 8-10 minutes. Let rest loosely covered with foil.
